This is much more than a simple food cookbook, raw or comments about raw food diets. I was surprised by the amount of information included in this book. It has all kinds of nutrition information and tables easy to read on almost anything you can imagine on this way of eating. These are just a few titles of the tables: Summary of research on the effects of cooking on phytochemicals, calories, protein, fat, carbohydrates and water in raw foods (6 pages), fatty acid composition of selected foods in raw food vitamins, minerals in raw foods, vitamins A, C, E, K and D: adult dietary reference intakes and consumption of commodities and raw diets high. And those are just a few. I like it because the tables can get information at a glance and compare different values so this is really a good book for me.
You do not have to be a total food convert raw to enjoy this book. Even if you’re thinking about adding raw foods to your diet healthier, I think you’ll find in this book as useful as me. It begins with a history of raw food movement, gives a lot of scientific evidence about why it may be a healthy way to eat, and then you have to give all kinds of information, things you’ve probably never even thought of, in incorporating raw foods in your diet or go completely raw. It tells you what you need to know if you decide to take the step, how to get all the nutrients you need.
There is a small section with raw food recipes, and another section with meal menus that I found particularly useful. I’m not looking (yet) to fully adopt this type of diet, but I would add a lot of raw foods for our daily meals. The recipes are very easy and is a good variety. A few I’ve tried and enjoyed are: Best Caesar Salad, warm cabbage salad, morocc “A Wonderful parchment and muesli. There is also a section dedicated to the handling of raw foods with security and one on food enzymes. Everything is easy to read and understand.
There is a great reference section, a glossary and an index. For me, this is important because I want to know the science behind the claims or studies, not only have the author at his word. This is a book of high quality, probably the best I’ve found on this topic.

Becoming Raw: The Essential Guide for raw vegan diet is exactly what it says. It is simply the most recent, authoritative presentation of the benefits, opportunities and challenges of a raw vegan diets print today by two major well-qualified authors, David Brenda and Vesanto Melina, vegan, both registered dietitians. These co-authors of books such as becoming vegan and vegetarian evolution and co-author with Cherie Soria the raw food revolution have provided convincing, well documented and clear summaries of strengths and weaknesses of a vegan lifestyle premiums. No sugar coating here. Hard science and useful analysis and interpretation of what has been studied. There are recipes here, but is not a cookbook. (Raw Food Revolution would be better for this.) I purchased a great deal of knowledge and understanding of this book. And I recommend it.
