		<description>As opposed to straight saurkraut, make home made kimchi, or the Americanized version I make, mixing cabbage of any kind with vegetables and greens of almost any kind.  The cabbage leaf microorganisms will make all of it ferment and last a long time.  You don&#039;t even have to add fermented fish and shrimp guts if you make it yourself.  So mine is vegetarian.  Add carrots, peppers, ginger, cilantro, broccoli, cucumber, or whatever is cheap.  Cheapest preservable health food, but labor intensive.</description>
